Begin your culinary journey by combining bread flour, whole-wheat flour, instant yeast, and a touch of salt in a stand mixer. Incorporate water and a portion of the mashed banana, mixing until a cohesive, shaggy dough forms. After a brief resting period, continue kneading to achieve a soft and pliable consistency. Finally, a hint of olive oil is kneaded into the dough, which is then left to rest and develop its structure.
While the dough rests, prepare the aromatic filling. In a separate bowl, blend brown sugar, softened unsalted butter, ground cinnamon, chopped walnuts, and the remaining mashed banana. This mixture will provide the characteristic sweet and spiced notes, reminiscent of traditional banana bread, seamlessly integrated into the focaccia's bready interior.
Carefully transfer the rested dough to a clean work surface. With moistened hands, gently stretch the dough into a square shape. Spread half of the prepared banana mixture over the center. Fold the corners of the dough inwards, sealing the filling securely. Place the assembled dough, seam-side down, into a large bowl, cover tightly, and refrigerate for at least eight hours, allowing it to slowly proof and develop its signature bubbly texture.
Approximately an hour before baking, coat a cast-iron skillet with the remaining olive oil. Gently transfer the chilled dough into the skillet, carefully stretching and pressing it to fill the pan evenly while releasing any trapped air bubbles. Allow the dough to rest at room temperature until it becomes visibly puffy and jiggly. Preheat your oven to a high temperature. Before baking, create dimples across the focaccia surface and dot with the reserved banana mixture and walnut halves.
Bake the focaccia until it achieves a beautiful golden-brown crust, both on top and underneath, indicating a perfectly cooked interior. Once removed from the oven, sprinkle with flaky sea salt to enhance the flavors. Allow it to cool in the skillet for a few minutes before transferring to a wire rack to cool completely. This delightful banana bread focaccia can be enjoyed warm or at room temperature, offering a unique and memorable tasting experience.
